Growing vegetables outdoors in the high Andes is extremely difficult. The altitude, soil conditions, and cold nights combine to make it difficult. Villagers exist on a limited diet of potatoes and maize. A simple greenhouse consisting of a small adobe wall, wooden poles and plastic sheeting greatly improve nutrition by enabling year-round production.
